Wood Apple Chutney with Lentil Pancakes

Ingredients:

  • 300g of wood apple pulp
  • 100g of jaggery
  • 1 teaspoon of salt
  • 2 teaspoons of cumin powder
  • 1 teaspoon of red chili powder
  • 150g of lentils
  • 50g of rice flour
  • 1/2 teaspoon of turmeric powder
  • 500ml of water
  • 3 tablespoons of oil

Kitchen Tools Needed:

  • blender
  • frying pan
  • mixing bowl
  • spatula

Instructions:

  • In a blender, combine the wood apple pulp, jaggery, salt, cumin powder, and red chili powder. Blend until smooth to create the chutney.
  • In a mixing bowl, combine the lentils, rice flour, turmeric powder, and water. Mix until you have a smooth batter.
  • Heat some oil in a frying pan over medium heat. Pour a ladleful of lentil batter into the pan and spread it out to form a pancake.
  • Cook for 2-3 minutes on one side until golden brown, then flip and cook for another 2-3 minutes.
  • Repeat the process until all the batter is used, adding more oil as needed.
  • Serve the lentil pancakes warm with the wood apple chutney on the side.
