Mango Apple Vegan Delight

Ingredients:

  • 2 ripe mangos, diced
  • 3 medium apples, cored and chopped
  • 1/4 cup of coconut cream
  • 1 tablespoon of lime juice
  • 1/4 cup of maple syrup
  • 1 tablespoon of chia seeds
  • 1 teaspoon of ground cinnamon
  • Fresh mint leaves for garnish

  • Spoon

Instructions:

  • In a blender, combine the diced mangos and chopped apples with the coconut cream, lime juice, and maple syrup. Blend until smooth and creamy.
  • In a mixing bowl, add the chia seeds and ground cinnamon into the blended fruit mixture. Stir well to combine and let it sit for 10-15 minutes until the chia seeds absorb some liquid and thicken the mixture.
  • Once thickened, gently fold in any remaining chopped fruits to add texture if desired.
  • Spoon the mixture into serving bowls or cups, and chill in the refrigerator for at least 20 minutes before serving.
  • To serve, garnish with fresh mint leaves for an added touch of flavor.
