Green Papaya Milk Rice

Ingredients:

  • 2 cups of jasmine rice
  • 1 medium green papaya, peeled and grated
  • 1 can (400ml) of coconut milk
  • 2 tablespoons of honey or agave syrup
  • 1 teaspoon of salt
  • 1/2 cup of water
  • Fresh mint leaves for garnish

Kitchen Tools Needed:

  • Rice cooker
  • Blender
  • Cutting board
  • Knife
  • Large mixing bowl

Instructions:

  • Rinse the jasmine rice under cold water until the water runs clear, then drain.
  • In a rice cooker, combine the rinsed rice, coconut milk, water, and salt. Cook according to your rice cooker instructions.
  • While the rice is cooking, prepare the green papaya by peeling and grating it into thin strips.
  • In a blender, combine the grated papaya with honey or agave syrup and blend until smooth.
  • Once the rice is cooked, fluff it with a fork and let it cool for a few minutes.
  • In a large mixing bowl, combine the cooked rice with the blended green papaya mixture. Mix until well combined.
  • Serve the green papaya milk rice in bowls, garnished with fresh mint leaves.
