Ingredients:

  • 4 cups cooked rice
  • 8 large eggs
  • 1 cup peas and carrots (frozen)
  • 4 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 4 green onions, chopped
  • Salt to taste
  • Pepper to taste

Instructions:

  • Heat sesame oil in a large skillet or wok over medium heat.
  • Add the peas and carrots, and sauté for about 3-4 minutes until tender.
  • Push the vegetables to one side of the skillet and crack the eggs into the other side.
  • Scramble the eggs until fully cooked, then mix with the vegetables.
  • Add the cooked rice to the skillet, breaking up any clumps.
  • Pour the soy sauce over the rice and mix well to combine all ingredients.
  • Season with salt and pepper to taste.
  • Stir in the chopped green onions and cook for an additional 2-3 minutes.
  • Serve hot.
