Ingredients:

  • 300g egg noodles
  • 200g mixed vegetables (carrots, bell peppers, and peas)
  • 150g shredded cheese (cheddar or mozzarella)
  • 2 tablespoons soy sauce
  • 1 tablespoon olive oil
  • 2 large eggs
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions:

  • Cook the egg noodles according to package instructions, then drain and set aside.
  • In a large skillet, heat olive oil over medium heat.
  • Add the mixed vegetables and sauté for about 5 minutes until tender.
  • Push the vegetables to one side of the skillet and crack the eggs into the other side, scrambling them until fully cooked.
  • Add the cooked egg noodles to the skillet, along with soy sauce, garlic powder, salt, and pepper. Mix everything together.
  • Sprinkle the shredded cheese over the noodle mixture and stir until melted and well combined.
